About Sofia Diali Sofia Diali was born in Casablanca, Central Morocco, in North Africa. As Morocco is a melting-pot of diverse cultures, musical, artistic and culinary styles and blends of multiple origins, she grew up in a rich climate of cultural diversity and interchange of ideas, languages and cuisines, Thus enjoying homemade traditional food, music, swimming and travelling from an early age. She had the pleasure to avidly watch, learn and help her mother and sister prepare and cook family meals of all shapes and tastes. Food was made from fresh vegetables, fish and/or meat bought daily, straight from the local vibrant market. Sofia used to be by the side of her mother, sister or some other family member, whilst fresh, homemade bread, couscous and tagine were made in the family kitchen. From locally ground wheat flour, couscous and bread was made by hand, accompanied by singing to music and having a short break to enjoy the occasional sweet cup of mint-tea or coffee. Bread was cooked at home or taken to the communal public bread oven (Ferran). As a French teacher for 12 years, Sofia took the opportunity to explore and try French cuisine and culture, which widened her knowledge and taste for other cuisines of the world. Her dedication and passion for the fragrant, aromatic Moroccan food remains at the top of her daily list of favourite dishes, however. She loves cooking either solo or with other family members and share the feast, the more the better. Advises on cooking healthy, simple meals, cooks for friends and families, and directs Moroccan cuisine workshops and demonstration in schools, educational centres and festivals. Whether in her immediate family circle, wider relatives settings celebration, wedding parties, birthday private or public parties, Sofia revels and thrives on initiating succulent food to suit the occasion. She also is a refined connoisseur in the music of the Maghreb, the Middle East and Western genres. Her music library is wide-ranging; a welcome source to support and compliment a good f?te! AS the Moroccan saying goes: "When the tummy is full, it tells the head to sing".
